Fudgy Nucolato Banana Bread

INGREDIENTS

  • 1 banana
  • ½ cup Nucolato
  • ½ cup oat flour
  • 4 tablespoons cocoa powder
  • 2 eggs
  • ⅓ cup unsweetened applesauce
  • ¼ cup unsweetened maple syrup
  • ¼ cup coconut oil
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • Chocolate chips (to taste)
  • Chopped pecans (to taste)

STEPS

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mash the banana with a fork.
  3. Add the eggs, Nucolato, maple syrup, and coconut oil. Mix well until you get a smooth, homogeneous mixture.
  4. Add the baking powder, baking soda, oat flour, and cocoa powder. Stir until fully combined.
  5. Fold in the chocolate chips and chopped pecans.
  6. Pour the mixture into a greased container (preferably rectangular, to give it a “bread” shape).
  7. Bake for approximately 40 minutes at 325°F.
  8. Once done, remove from the oven and let cool for a few minutes.
  9. Optional: Top with a drizzle of peanut butter and Nucolato before serving.
