

Fudgy Nucolato Banana Bread
INGREDIENTS
- 1 banana
- ½ cup Nucolato
- ½ cup oat flour
- 4 tablespoons cocoa powder
- 2 eggs
- ⅓ cup unsweetened applesauce
- ¼ cup unsweetened maple syrup
- ¼ cup coconut oil
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- Chocolate chips (to taste)
- Chopped pecans (to taste)
STEPS
- Preheat the oven to 325°F (163°C).
- In a bowl, mash the banana with a fork.
- Add the eggs, Nucolato, maple syrup, and coconut oil. Mix well until you get a smooth, homogeneous mixture.
- Add the baking powder, baking soda, oat flour, and cocoa powder. Stir until fully combined.
- Fold in the chocolate chips and chopped pecans.
- Pour the mixture into a greased container (preferably rectangular, to give it a “bread” shape).
- Bake for approximately 40 minutes at 325°F.
- Once done, remove from the oven and let cool for a few minutes.
- Optional: Top with a drizzle of peanut butter and Nucolato before serving.
